Chickpea Peanut Butter Muffins

Wholesome muffins made with chickpeas, creamy peanut butter, and a touch of honey for natural sweetness.

Cook Time 25 minutes
Servings 6 muffins

Ingredients
  

  • 1 ½ Cups Cooked Chickpeas
  • ½ Cup Natural Almond Butter
  • Cup Pure Maple Syrup
  • 1 Tablespoon Pure Vanilla
  • ¼ Teaspoon Baking Powder
  • Chocolate Chips as Desired
  • Salt to Taste

Instructions
 

  • Preheat oven to 350 degrees F.
  • In a food processor, add all the ingredients except the chocolate chips, and cooking spray; blend until batter is smooth. (The batter will be thick)
  • Fold in the desired amount of chocolate chips.
  • Fill your muffin tin with baking cups.
  • Add batter evenly to each cup.
  • Bake for about 25 minutes, checking to see if a toothpick comes out clean. The muffins should be slightly browned.
